Arguably the most important ancestor is Charles Hitchcock (b. ~1791), who left the sleepy rural Essex village of Dedham sometime around 1824 and eventually started a fishmongery business in Stratford, near London. Nearly a hundred years later, the seeds of that business had become the highly successful John Hitchcock Ltd., Fishmongers & Poulterers with over 20 locations around London.

The surname "Hitchcock" means "son of Richard" — Hitch or Hick was a shortened version of Richard (similar to Dick, Rick and Rich) and the "cock" suffix denotes a male child. There are number of variations on the surname (some phonetic) including: Hichecok, Huchecok, Hychcok, Hickocke, Hichcock, Hiscock, Hiscox, Hiscott and Hiscoke. The parish records of Dedham also include variations such as Hitchcocke, Hitchecoke and Hitchkock.

By the time of the 1891 Census, over 40% of all the people listed with the surname Hitchcock were living in London or in the surrounding counties of Middlesex, Essex, Kent and Surrey. Of the remainder, around 15% lived in Devon, Cornwall and Somerset, with a further 5% in Derbyshire.
